I have one or two days there and coffee shops are not an option :(

Which sites are top priority/not to crowded?

Seriously, you just cant miss Van Gogh Museum imho.

Go see the Dam. Boat trip around the canals. A night at one of the clubs on Korte Leidsedwarsstraat, there should be a nice whiskey bar overthere with hundreds if not thousands of names on the list.

Do NOT forget to try the chips (fries as Americans call them). You can choose different sauces to go with them, and perhaps add a sausage if you want.

There are a couple in the Red Light District and in the streets near Dam Square. I really recommend them :)

Visit Madame Tussaud museum, and rent a bicycle and travel around the city that way. I would say to make occasional stops in coffee shops, but nevermind.
