In a land where wine is made from stone and bread is made from wine, Man extracted from the burning lava a delicious nectar, a unique Liqueur Wine.
Pico Island's Vineyard Culture Landscape is not only distinguished by its incredible beauty, but also by its magnitude. If the piled stones were removed from the walls, one by one, and aligned, they would cross islands, continents and oceans, going around the world twice.
We present a sui generis White Wine full of identity and authenticity, which includes three varieties: Arinto dos Açores, Verdelho and Terrantez do Pico. The latter is unique in the world. This wine surprises with its freshness, minerality and salinity.
The White presented is the perfect choice to accompany snacks: Seafood from the Azores Sea (Cavaco, Caranguejo Fidalgo, Lapas and Búzio).
This table could not miss the exceptional and always fresh fish caught in our sea, represented here with the traditional fish broth. A unique and much appreciated dish.
The PGI (Protected Geographical Indication) meat comes directly from the green meadows of our Island, tender and succulent, accompanied by “Alfredo” Cheese, a soft cheese cured, produced with raw cow's milk.

Numa terra onde da pedra se faz vinho e do vinho se fez pão, o Homem extraiu da lava queimada um delicioso néctar, um Vinho Licoroso único.
A Paisagem da Cultura da Vinha da Ilha do Pico, não se destaca apenas pela incrível beleza, mas pela magnitude. Se as pedras amontoadas fossem retiradas dos muros, uma a uma, e alinhadas atravessariam ilhas, continentes e oceanos, dando por duas vezes a volta ao mundo.
Apresentamos um Vinho Branco sui generis pleno de identidade e autenticidade, que inclui três castas: Arinto dos Açores, Verdelho e Terrantez do Pico. Esta última, única no mundo. Este vinho surpreende pela sua frescura, mineralidade e salinidade.
O Branco apresentado é a escolha perfeita para acompanhar os petiscos: Marisco do Mar dos Açores (Cavaco, Caranguejo Fidalgo, Lapas e Búzio).
Nesta mesa não podia faltar o peixe excecional e sempre fresco capturado no nosso mar, aqui representado com o tradicional Caldo de Peixe. Um prato único e muito apreciado.
A carne IGP (Indicação Geográfica Protegida), vem diretamente dos verdes prados da nossa Ilha, tenra e suculenta, acompanhada pelo Queijo “Alfredo”, um queijo curado de pasta mole, produzido com leite cru de vaca.

In the twelfth century, the Templars chose Tomar as their stronghold. When the Order was dissolved and continued with that of Christ, the council jealously guarded the Templar treasure: a stunning landscape, an exceptional historical legacy and a unique know-how. It is based on this heritage that we have prepared this table.
At the center of the meal is the goat kid, a festive dish, seasoned and roasted according to traditional precepts.
The bread, baked in a wood oven, evokes the telluric force of the place.
The wine is Templar in name but also in the fraternity to which its excellent flavor invites.
The olive oil summons the secular tradition and the olive grove that populated the old fence of the friars of Christ.
At the Hotel dos Templários, with its eyes on the Castle, you can relive the splendor and magic of medieval and Manueline Tomar.
And there at the top of one of the Seven Hills, the fortress built by D. Gualdim Pais, a dear friend of D. Afonso Henriques, together with the Convent of Christ crowns the city, a World Heritage Site, but also a compendium of History from Portugal.
To celebrate his excellent memory, Tomar goes back in time and goes back to medieval times every year at the Templar Festival.

No século XII, os Templários escolheram Tomar como seu reduto. Quando a Ordem foi extinta tendo continuidade na de Cristo, o concelho guardou ciosamente o tesouro templário: uma paisagem deslumbrante, um legado histórico excecional e um saber fazer único. É com base nessa herança que preparámos esta mesa.
No centro da refeição encontra-se o cabrito, prato dos dias festivos, temperado e assado de acordo com os preceitos tradicionais.
O pão, cozido em forno de lenha, evoca a força telúrica do lugar.
O vinho é Templário no nome mas também na fraternidade a que convida o seu excelso sabor.
O azeite convoca a tradição secular e o olival que povoava a antiga cerca dos freires de Cristo.
No Hotel dos Templários, de olhos postos no Castelo, revive-se o esplendor e a magia de Tomar medieval e manuelina.
E lá no topo de um dos Sete Montes, a fortaleza mandada construir por D. Gualdim Pais, amigo dileto de D. Afonso Henriques, em conjunto com o Convento de Cristo coroa a cidade, Património que é da Humanidade, mas também compêndio da História de Portugal.
Para celebrar a sua excelsa memória, Tomar recua no tempo e volta à época medieval todos os anos na Festa Templária.

Lembra-me muito o cozido brasileiro mas aqui além da linguiça/chouriço é comum adicionar outros tipos de carnes, geralmente gordurosas para adicionar sabor ao caldo como Carne Seca, Lombo, e etc (Varia de estado), a escolha dos legumds também é bem similar, mas por aqui além do nabos, cenouras, batatas é comum usar batata-doce, banana da terra, milho e outras plantas mais nativas da américa, mas a base do prato não se perdeu e inclusive esteve muito conservada como receita por gerações em minha familia, em minha opnião é um dos pratos com gosto de "lar, doce lar" combina muito bem com uma dia frio meio nublado e uma bebida doce.
