Actually, the samples are considerably bigger for many ethnicities (e.g., 40 Russians).
The nature of the research is such that a small amount of samples is sufficient to make some conclusions (unlike with haplogroups), seeing how there is a large correlation between ethnicity and genetic make-up, and it is affected by relatively minor admixtures. For instance, all Russians without visible admixtures show similar general patterns.
The total amount of samples which establishes the framework is fairly large, about 700 Europeans. That is quite enough for 6-8 elements. If it is specifically Polako that you do not trust, then DODECAD, 23andme, etc. show similar results in a different form, and their samples are larger.
