Most Caucasians do not look European. In Russia they're considered "blacks" (chorny). Sometimes they're light, sometimes comparable to Balkanites or Southern Europeans (a Spanish guy for ex told me some Chechens can pass as Spanish) but many or most still look West Asian i.e. more similar to their Southern neighbors than to Northern. I didn't know this was news for you. Particularly North Caucasians also have that distinct Muslim look. I don't know how to explain that but Armenians and Georgians usually don't look Muslim.
