I started doing fencing(sabre) in September, I like it so far.
What I really want to do is called HEMA which stands for Historical European Martial Arts and it is basically swordsmanship.
I highly recommend you to look up ScholaGladiatoria on YouTube. The channel is run by one of the most known HEMA
instructor in the UK. The teachings are based on medieval and renaissance treaties. He is also a great source of information on sword fighting, swords and armours.
He posts videos regularly on his channel.

Boxing originated in Ancient Greece,and there is Savate,which is French Kickboxing more recent in origin.
Sambo is a Soviet made martial art but it contains moves from Asian martial arts so that falls out.
European martial arts basically consist of wrestling, stickfighting and fencing, in a number of local varieties.
In my mind, wrestling is more associated with Greece and Italy, fencing with Spain and stick (or canne) with France.
UFC is the best today if we can consider russia europe then sambo is best
