    The Azores are known for their natural landscapes, their nature and as a undiscovered paradise. These nine Atlantic are also recognized for its huge and rich sea that connects all the islands. Is in this sea that we can find one of the most popular products, known for its freshness and quality, the Azorean fish. And this is, for sure, one of the reasons that make Azorean cuisine one of the highlights for those who visit the islands.

    For those who already are passionate about Portuguese (and Azorean in particular) cuisine, and for those who are about to dive in this amazing world, we want to show you, step by step, how to make a fantastic Azoream Fish Stew.

    Ingredients for 8 people:

    Different types of Fish (16 pieces)
    You can use grouper, hake, ray fish and skate fish (but it can also be cooked with only one type of fish)
    2 large onions
    5 cloves of garlic
    1 can of peeled tomatoes or 4 very ripe fresh tomatoes
    1 green pepper
    1 red pepper
    Potatoes cut into thick slices
    1 glass of white wine
    1 fish broth
    Spices (black or white pepper, or other)
    Olive oil
    Salt

    How to prepare it?

    Peel the potatoes, cut them into slices and reserve.

    Cut in slices half an onion and the pepper in strips, two cloves of minced garlic, mix them in a big pot and drizzle with olive oil.

    Then, place a layer of fish and season it with salt and splices and add the peeled tomatoes crushed or cut into pieces. After, add another layer of onion, garlic, pepper and potato. Once again, add a layer of fish and continue to do different layers until using all of the raw ingredients. Drizzle with virgin olive oil between each layer.

    Finally, shred a piece of fish broth over and drizzle everything with white wine.

    The juices released by the ingredients are usually enough for the cooking but you can add a glass of water too.

    This is one of the most famous and popular dishes in the Azores, often prepared for gatherings of friends and family and to celebrate traditional feasts. You can try to bring a little bit of the Azorean taste to your table, but we can tell you for sure: it tastes better in the Azores!

    SImilar to Cassola, Sardinian fish stew but ours is without potatoes...
