In America Anglo-Saxon is a umbrella term for White english speaking protestants. While Italians are not really Anglo-Saxon they could be if they are assimilated.

And I'm pretty sure the Italians don't give a shit about fitting in the WASP club, their rich culture/heritage is enough, they are very proud of it.

No. Italians are never Anglo-Saxon. The Anglo-Saxon has to do with the people of England ( "Angle-land or "land of the Angles). Anglo-Saxon just means English Saxon or Saxon who lived in England ( Angle-land). It could also include Germanic people, especially West Germanics such as Frisians who are people who inhabit the Netherlands, Germany and Denmark.
In the USA, a much more loose term for Northern European-descended Germanic-speaking people. Especially of the ones of British descent ( WASP). One of the founding fathers ( Benjamin Franklin) calls them (Anglo-Saxons) foolishly equated "whiteness" with Anglo-Saxons ( WASP) only.
Thus I don't see Italian by any iota making the "cut" for being Anglo-Saxon. I believe a true or pure Italian would be very proud of their Mediterranean lineage than being "considered" Anglo-Saxon.
