Spaghetti with tomato sauce. Probably the best one I've made in a long, long time.
I cooked the passata on butter instead of olive oil and did not add any pasta water to it while simmering.

This weekend (perhaps) I'm doing Ragú alla Bolognese from the exact official recipe. Let's see if it is specially better than the normal meat sauce we make and call "bolognese".

Incredibly tasty, but the flavours are so concentrated that now I understand why Italian portions are generally smaller, palate fatigue is an important concept.

The ingredients are:
1 onion
50g celery
1 large carrot
150g cured pancetta
300g very lean ground beef
1 glass wine
1 glass beef stock
5 tablespoons double or triple concentrated tomato paste
half a cup of milk

this for 4 portions.

So imagine just how powerful it is, compared to pure ground beef, tomato sauce, onion-only ragú, that one can actually eat as a big main course and not as a small primo piatto.
