that's not true just before normans came to sicily muslims were divided and weak. It's even an emir of eastern sicily that asked normans to intervene.

As for spain we're talking about a period of more than 700 years that involved a whole peninsula ...showing a random squadron of normands defeating a random squadron of moors isn't going to tell us much.

They took a entire regions and held it (there was more than one Norman army in Spain) they just weren't allowed to keep it. They wiped out entire armies.

they did it when the ummayyad caliphate was at its weakest point and taifas started to appear so like in sicily they just took the opportunity. It would have been different if they had to confront the almoravid and almohad army.
