Puerto Rico, Uruguay and Argentina.
I was born and spent my childhood in PR and still have family there on the side of my mom (although some live in Canarias and Miami now too), and well Argentina is the country of the family I married into and I feel very comfortable there every time I visit . Bs.As. is one of my favorite cities in the world!!
Uruguay feels like an extension of the Pampas region of Argentina to me and I like it very much as a country, would not mind living there!! I have very fond memories of Montevideo, just spending my days doing absolute shit all, strolling around the old town, going back to my hotel along the Rambla, eating good food, just chill vibes jeje. Although, fuckin Punta Del Este is an overrated and overpriced tourist trap. I much prefer the eastern sea beaches of Rocha, and especially Cabo Polonio!! Piriapolis, La Barra, La Paloma, and La Pedrera are also super nice.
EDIT: I didn't read the OP post jaja, voted for my home island. In place of PR I would say maybe Chile, although I've never been there either.

Paraguay: If I had money I would buy a farm there and raise cattle and crops etc, or open a trade on the border with Brazil, I've seen several reports of Brazilians who got rich doing this, besides when I visited Paraguay I loved the country and people, would live in it without problems.
Argentina: Mainly because of the Patagonia and because I like Argentines too (despite the country's financial situation)
Uruguay: I love it, because they are a Rio Grande do Sul without people from Rio Grande do Sul, and also because they're shitting about religion (unlike the rest of latin america) and that's something I like.
And I would live quietly in the three Hispanic countries of the Caribbean, because that Caribbean vibe is something I've always liked.
