    There are no strict rules on okroshka, you can make it thicker or lighter and change ingredients all you want.

    i think the main difference between okroshka and tarator is the absence of garlic. also okroshka is made, usually, with sparkling water

    we also have that..it's called boza or braga but it tastes quite different. it's not really kvas

    Kvass or whey. Kefir is too thick for okroshka for my opinion, but many people like with kefir. In Northern Caucausus they do it with mineral water sometimes. Some add mustard, some dont want to make it hot. I tried to make okroshka with non-alkohol beer - it was good result. In rural area also tried okroshka on beetroot (red) kvass and on rheum drink.
