    I think, now absinthe is legal in France, I might find some without problem. I can also order a bottle in internet. I don't live far from swiss but I never go.

    When I had it, the sugar cube was dipped quickly in the absinthe, then placed on the spoon and set alight.



    Another time I had it with water.

    There is so much ritual and myth surrounding it that you almost feel privileged to drink it. I loved that about it. In reality it tastes horrid.

    Honestly, I prefer the herring without the vodka. Just the herring is good enough.

    The second method, the Bohemian method, was invented in the 90's by the Czechs as a gimmick to disguise the fact that their fake absinthe could not louche because it's not absinthe. It's infused vodka with food coloring added. If you do this with real absinthe it ruins the flavor.
