If you do try indian street food, I would try the ones that are made on hot surfaces / tandoors in front of you + use boiled water (naans, pav baajis, vadapav, etc.). I am pretty sensitive to outside food, and I didn't get sick eating those kinds of street foods in India. As good as pani puri is, I would avoid it. I got sick as hell when I tried it.

that makes me afraid of india too, that you can get sick from food or water, and the filth and shit on the streets and in the ganges and the air pollution and the crazy hot temperatures, once i read in india people stuck their shoes on the street because it was so hot that the street melted.
