In my own experience, men prefer not to be alone, especially as they get older.
Maybe it's that many men are domestically challenged and need a female to cook and clean because they never really learned those skills.
However, I've seen both men and women move on rather fast at the end of some long relationship/marriage.
Personally, and god forbid this ever happened, if I lost my husband, I'm done.
Relationships for me are very deeply meaningful; not to be easily replaced. I''d never marry again nor would I likely date. I'd have my kids/stepkids/cats/friends to keep me company and that would be okay for me. I'm introverted and quite the loner as it is.

It might make women like you feel better to believe it, but women are just as bad if not worse when it comes to cheating and breaking up. Most marriages in the West are ended by women.
As someone else wrote above, typically, if a woman breaks it off she already has another man ready to go. Barring certain circumstances, she won't leave until she has found someone else. The phenomenon of keeping orbiters at the ready is very real. The exception to this is older married women who may divorce without having a new man, but there's a catch: they might not have a new man, but they have the security and resources of their ex husband in the property settlement, child support, alimony, and support from the state.
Men, on the other hand, will chuck in a relationship without having another bitch waiting in the wings if they get sick of it. Men become accustomed to being alone from a young age and don't fear it whereas women alone go to shit.
All women are whores in the sense that, in one way or another, they use their vaginas to secure resources. As the physically weaker sex, they have no other choice but to do what they do. In the age of feminism, we are giving them all the help they need to slut it up big time and accept no responsibility for their actions.
Back to the original question of the thread
Men don't necessarily move on fast, particularly average guys who have to really fight for pussy. They will dispense with a relationship if it is doing them more harm than good, but that doesn't mean they are happy about it or move on quickly. What it means is that they are strong and secure enough to go it alone, unlike most women.So, what causes men to so quickly move from a break-up with a woman to the arms of another one?

I don't believe that this is true. i have known men who "carried a torch" for decades after the breakup of a relationship. More commonly, I have known men so embittered by a relationship which turned out badly as to turn their backs to marriage and even to women.

I don't like using this stupid jargon of "orbiters, alphas, hypergamy" but bear with me this time...
I think logically this is more common in females due to the sole fact most females always have a lot of admirers in a way that doesn't require much effort. For the average man to have a figurative harem like this takes a lot of energy and social effort.
A woman can attract males by only being passive and idle. A male can not, he has to put active effort in it.
In any case, I think the mental effort that takes getting new girls may distract the person in question from his grief. But theoretically it is far harder (costly, taxing) for him to do so than for an equally attractive/valuable female equivalent.
