rethel, to be honest. I dont think to have some foreign roots (one even didnt know these ancestors) makes him/her to be of different ethnicity than the rest of the nation he/she was born in.
Yes, you can have some German ancestors, but you were born in Poland, Polish culture is the only thing you know. You are even a proud orthodox Catholic. For me you are a Pole with some German roots.
