Eastern Romans were obligated by imitation to create a knight combat force on their struggles with persians, arabs and later against turks.

The Bizantines are the fathers of christian knighthood.

Magyars were splendid knghts, but when they arrived in Europe, they were religiously jews, as they learnt with Khazars.

The combat horses used by the Polish Winged Hussars in the 16th and 17th centuries were a special breed and very expensive to acquire.
The breed used by the hussars was a special one, the result of crossing typically Polish horses with horses from Turkey and Persia. Fast, manoeuvrable and of high stamina, the hussar steed played a crucial role in the winged horsemen’s victories. Not only was the value of such a horse huge, comparable to that of a whole village, but as an important military asset it was subject to a rather strict law of ownership – it was forbidden under penalty of death to sell one abroad.
The highest price known to have been paid was 1,500 zloty for a breed of the most exceptional value, affordable to only the wealthiest of Polish and Lithuanian families. You can compare this with what was cost to buy an ordinary common horse at less than 10 zloty.

Byzantine cavalry men were mainly mercenary Pecheneg and Uz Turks. As a known fact they switched sides during battle of Manzikert 1071. They joined Seljuk army even tough they were Christians. They didnt want to fight against their Kinsmen. They also hired by Muayyads as masters of fight and some settled in a village called Al-Guz (Turkish Oghuz) in Portugal they were Pagans tough.

Really Byzantine used mercenaries extensivelly, but troops like heavy cavalry were noble citzens, while infantry tended to be peasants.
