Why do some Arabs look more whiter then a greeks, Armenians or Sicilians?

Phenotypes are unpredictable at times and tend to be over emphasized. That's why it's important to match up person with raw dna data.
As an example my wife is German/Irish and has been mistaken for Hispanic based on her dark hair color, pronounced cheek bones (?). Just a sampling on how misleading physical characteristics can be at times.

There is some overlap due to Mediterranean general type. However Italy/South and Sicily has types probably impossibile in W Asia.
Then this Sicilian (A.Provenzano) would never pass in w Asia

That's true. But there's basically no difference in terms of skin color between Greeks and Albanians so I don't see your point. Middle eastern women in general tend to have paler white skin than basically all of Europe. Armenian women have paler skin than almost all of Europe so I'm not sure why you included them.

But I agree most of them can't. Btw, this poll was created by an user obsessed to link Lebanese with Italians. So we can never discard some cherrypicking.

The Lebanese posted there were not particularly light. Anyway there is a genetic link between them that is worth mentioning (not the case with other southern Europeans though to Lebanese) so it is not far-fetched it shows phenotypically, at least some of the time.

Probably due to tan. In South Italy there is a culture of tan because it's healthy and because of the beautiful beaches.

Why would people who carry Seljuk genes be whiter looking when central asian turkmens are far away from white looking? Levantines are way more caucasoid looking than Centrla Asians.
This is even true when you compare the arabs and turks in the border region of hatay,antep, adana etc.
