The answer is simple , we have no fucking idea.

We don't know anything from 10.000 bc and before. We only speculate from findings.

I think the ancients must have found dinosaur bones and then reassembled them together, just like we do today in our museums. They probably thought the creatures still existed in their time, for lack of any other way of making sense of them.

I have considered this, but I don't think this explains everything.

The medieval dragon, cyclops, and such mythical beasts were probably the only logical way to explain those fossil finds.
