Pagan is problematic both because of the Roman origin of the word and it's current negative connotations with the liberal/feminist/lesbian/pagan crowd that's so popular here in the US. Polytheist, although accurate to some degree, is as accurate as calling Christians monotheists. It's true, but it's so generalized that it hardly means anything. Calling you guys only monotheists would not differentiate you from Muslims, Jews, etc., just as calling us polytheists would not differentiate us from followers of indigenous African or Australian religions.
