Religious postulates do not require any proofs. On the other hand, science doesn't need to debunk this concept. So the answer is no, it won't prove anything in this sense.

I think of Mary Shelleys's Frankenstein. A man finds his head attached to another with all the resulting turmoil and anguish of something that knows it's apart from the natural cycle, cursed and damned by God...

But my answer would be: It all depends on one's belief and one's belief is his utmost proof.

Socrates and Plato thought the mind is separable from the body. Descartes believed that the mind and body are two different substances.

The mind and the body are on two different planes of existence - one is physical, the other is metaphysical. It seems that the mind depends on the body, but that cannot ever be proven.

Woudn't the soul be in the brain, because that's where one's memories are stored at.

Nope, according to religious/spiritual/whatever people. They believe brain=/=soul and that soul surives the body's death.

Depending on the philosophical system, a soul can either be mortal or immortal.[2] In Judeo-Christianity, only human beings have immortal souls (although immortality is disputed within Judaism and may have been influenced by Plato,[3] and in Eastern Orthodox Christianity the soul is said to be immortal by grace, but not nature). For example, the Catholic theologian Thomas Aquinas attributed "soul" (anima) to all organisms but argued that only human souls are immortal.[4] Other religions (most notably Hinduism and Jainism) hold that all biological organisms have souls (atman, jiva) and a 'vital principle' (prana), as did Aristotle, some teach that even non-biological entities (such as rivers and mountains) possess souls. The latter belief is called animism.[5]

Souls have already been proven to not exist simply because no one has been able to prove they do exist.

The second your body dies you loose weight.
That is the soul leaving the body.
