Assyrians are actually the least Semitic group for sure. Iranian Assyrians have more Persian in them. Nineveh Plains Assyrians have some Kurdish mix. But, at the end of the day, we are still genetically distinct and have our own cluster that sets us apart from our neighbours.
The Assyrian Empire sprawled into Asia Minor. The Hittite language was one of the (non-official) languages spoken in the Neo-Assyrian Empire. So I don't see why some Hittites got absorbed within the Assyrian population as years went by, as they did into modern day Syrians and Turks.
