What exactly makes them chosen? how and why?

Not an expert on the topic, but I think the term is a reference to being chosen by God to convey his laws to all mankind.
The Bible was written by Jews, and "Jesus" and his twelve apostles were Jewish.
Many Neo-Nazi trolls spin it into some chosen race nonsense, all while following a real chosen race doctrine for themselves.

Of course they often employed locals and treated them better and where less arrogant than other Europeans

Also each time i buy fish there are at least two Egyptians who help and clean the fish

So its about following commandments?

What makes people who follow commandments better? for example they take God very seriously and therefore follow his commandments? They have more self control and don't succumb to their whims like "regular gentiles" etc?

so are Jews morally superior?

can I please know how a gentile who is a bloody stock broker, real estate dealer, business man who is doing business all day, doesn't really fulfill most of these commandments, doesn't even pray properly, who is a recent convert or descended from converts, "chosen"?
