Regardless if you and I and many others don't consider them to be "white", as well they themselves don't consider themselves as such, the Brazilian census does consider them "white". Obviously socially is a different matter. Adriana Lima looks "white", but she herself doesn't consider herself one. Adriana herself has called herself an "Afro Brazilian" and other times described her pardo/mixed background in old interviews when she started modelling. She herself is about 2/3 European so her daughters would be mostly European either way and that's "enough" for some people to consider them "white".

America also considers their Arab/West Asian/North African descendant populations to be "white" and not "Asian" or "African" for census reasons. This comes down to the fact that race is not real. Countries like USA are literally broadening their census definition of "white" to keep their numbers up.White Brazilians refers to Brazilian citizens of European and Middle Eastern descent.

Brazilian census goes by self-declaration, e.g. if someone dark as night declares itself as "White" they (people working for the census) got to put it down as White, period.
I think Arabs would declare themselves as Others, Brazilian census have that option too (it also offers the group "Brown" and anyone could declare that). Unlike mixed people I often saw in Latin America, the Arabs are not eager at all to declare themselves as Whites, they are usually very conscious of what they are.

I don't think Adriana Lima had that many surgeries to be honest. She just takes care of herself more now and that's a big factor. Good makeup is also another massive thing to take in consideration. When it comes to pictures, lighting is another one (and a lot of the times is photoshop). I am telling you because I used to be a big fan of beauties pageants and know about this stuff.
Also, it's the rule for A LOT of SSA admixed people to change of appearance throughout life. It happened to me to some point. If you see pictures of when I was in my 15 or even in my early 20s, you would think I had a nose surgery or something because it was bigger. Even my hair texture was slightly different at some point though I suspect this last thing has to do more with weather more than anything.

My nephews have gone through a lot of physical changes and they are younger than 20. Go figure LMAO.
My brother must be around 25% SSA and her ex wife around ~15%. So very likely that their phenotype is similar to Adriana's.
They were light brunettes when younger. One had light yellow hair but wasn't reallly pale but olive-skinned. Now she's someone tanned though. Not sure if it's because of the climate because they live in the island.
People is so ridiculous. They take a picture where her nose look flatish because of the angle and lighting and then compare it with another one where she clearly has a better makeup. I can't with these internet pages LMAO.
