Yeah, the pigs are always eaten entirely during special occasions in these two places, nothing is wasted. It's commonly eaten in the philippines too and I believe Spain also but I'm not spanish so i'm not quite sure about that. Also the word barbecue or barbacoa in spanish comes from the taino word(the natives of the Caribbeans) who were the first to invent this method of cooking which became popular around the world.

Swedes eat it too, and also it really depends on what time of year it is killed. Also, the local vegetation as the diet can change the taste.
