1. How common are results like these in Southern Italy + Sicily
https://www.youtube.com/watch?v=JmmYUik5Hmk&t=9s ---> 10.2% Sephardic + 4.4% West Asian
https://www.youtube.com/watch?v=FC_AjCxf3Hc ---> 20% North African, 3.6% Ashkenazi
Northern Portuguese and Central Portuguese:
https://www.youtube.com/watch?v=GDb-DAdnAqw ---> 13% North African
https://www.youtube.com/watch?v=QiLQBMDCNTY ---> 12.7 North African, 4.9% Ashkenazi
2. Then this guy, 98.7% Iberian, 1.3% Ashkenazi, looks like this:

How do random Portuguese and Italians get these results, and then a Spanish guy gets this results and looks like he does? He doesn't even look Ashkenazi to me like people are saying in the comments, but he doesn't really look Spanish either.
Also someone who knows more about how DNA is transmitted should explain, but wouldn't these percentages be almost a great grandparent equivalent assuming a perfect inheritance hypothetically?
