In Sardinia we usually consume cured sausages, or when fresh we cook them on the grill. Every village has a slightly different recipe, in my village the typical recipe is pork meat, black pepper and fennel seeds; in other places they also add red wine or spirit.
The sausage made to be cooked it's usually long and spiral-shaped
