    As long as they sing in Hebrew it is Middle Eastern.

    European Jews didn't really use Hebrew as everyday language. Hebrew was only their liturgical language, and it originated in Ancient Middle East. In daily life Ashkenazi Diaspora communities used either Yiddish or languages of their host nations.

    Middle East is a geographical term. It has many different cultures.

    Obviously Israeli music doesn't sound like Muslim music.

    But Ashkenazi Jews are only 40% or so of Israeli Jews. Many Israelis are Mizrahim, local Middle Eastern Jews. Many are also Sephardic.

    Even Ashkenazim have ancient roots in the Middle East, and large part of their ancestry is Middle Eastern, despite their history of living in Europe for many centuries.

    But there is European Jewish music as well - it just doesn't have lyrics in Hebrew.

    I found some Tunisian rock music that also does not sound MENA.

    Does it mean that Tunisia is not a North African country?

    Also a lot of Polish music does not sound Eastern European at all.

    No, their dominant culture is Askhenazi which is as European as it gets. Middle Eastern elements artificially entered their culture for political reasons, to make them appear more 'local', like their food.

    That’s how their music sounds like, lol. Basically european, but occasionally some middle eastern elements are added in as an afterthought. So it occasionally sounds like middle eastern music made by Europeans.
