I don't mean Southern Europeans from Middle Ages were Nordic looking, but according to medieval and Renaissance paintings, many people on the paintings look more French than Italian or Iberian

In the time of the Middle Ages, in the case of the Iberians, there were a large number of immigrants from European centers and Germanic people such as the Visigoths, Normans, Swabians, Germans, little Norwegian Viking incursions among others.

And in the case of Italy something similar must have happened and in more quantity since Italy and Germany were the same country in the middle ages.

Not really. This (mosaic from Ravenna, early Middle Ages) is much more representative of how they looked like:

The average people looked the same as today but many of their rulers were Germanic descendants.

That's right, Charlemagne's Carolingian empire also had parts of Italy.

Yes, but there were also more Germanic populations than those living in those places today, although in some cases they were separated from the local population.

Dante didn't look Germanic and he was from Tuscany, but, having said that, 19th and 20th century immigration from south Italy and Sicily have certainly had a racial impact on the center and north.
