Well I already am Asian so I'm just gonna answer for a Mongoloid Asian/Far Eastern ethnicity as they're a different race to me. Ideally, maybe Korean or something since they're probably the Far Easterners with the best reputation in terms of looks, having a first world country, good reputation as immigrants, etc.

But I would say that being a Khmer (Cambodian) sounds more interesting, especially since almost nobody knows anything about them and they have a strong mysterious aura. They don't have territorial claims against them (though the opposite is not true), they're ethnically homogeneous for the most part, they aren't rivals with a super power like China but friends with them, they have a rich history, there's a lot of diversity in their flora/fauna there, they have a coastline, and they are the oldest ethnicity in Mainland SE Asia with their own country. I didn't choose multi-ethnic states like the Philippines, Indonesia, etc. as they are too ethnically diverse and such an entity would be harder to identify with (this only applies to the Old World) and some of these other countries have separatist groups with legitimate claims. Thai would be a close second after Cambodian cause Thailand has the richest history in the region and the vast majority of the country's population is Thai.
