What would Greece have been like if there was no Ottoman presence?

Greece (as it was constituted during the 15th century) was a principality of the Byzantine Empire and thus when the Ottomans ransacked Constantinople and seized control of the Byzantine empire the area that is now considered Greece fell under Ottoman control. What if (hypothetically) the Ottomans never entered Eastern Europe and/or attempted to seize the Byzantine territories? What would have been different about Greece proper? Would the Venetians have seized greater control and/or would Greece have become a Venetian or Frankish principality? Curious about other's opinions?

I think it's terrible that there are only 13 million Greek speakers left in the world, when Greek has some of the oldest literature, going back 4,000 years. If the raw pony-meat eating hordes hadn't spilled out of Central Asia and conquered Anatolia, there would be many more speakers of Greek.

Probably without Islamic incursions ''Greece'' would be a multi-ethnic country uniting all Hellenic speakers in the Balkanic peninsula, Aegean islands, Anatolia and the Middle East.
Pretty much most of current ''Turkey'' would be part of a country called ''Greece''.

Greek speakers would also be millions and their cultural and geopolitical influence much bigger,
