I think the Levantine Greek Orthodox would be the best for you. There is also a fundamental theological difference between the two churches. The Levantine Greek Orthodox are part of Eastern Orthodoxy while the Coptic Orthodox are part of Orienal Orthodoxy being non-chalcedonian.

Yeah the hymn is in Byzantine rhythm

I think the 4 old Patriarchates, Constantinople, Antioch, Alexandria and Jerusalem use the Byzantine rhythm.

I think that's wonderful that you're reading the Bible, with a sincere interest in finding its virtue.
Have you read the works of Khalil Gibran? You probably already know that he's an icon of Levantine Lebanese Christian Literature.
Gibran's The Prophet provided early inspirational teachings for my poetic religious and spiritual development. It was helpful for my writing of poetry.
Gibran's book Broken Wings gave me additional insights into the oppression and repression of the Ottoman Empire. It showed the suffering imposed from despotic Ottoman Taxation upon the Christians of the Ottoman Empire.
