What countries? Most of the hispanics in those these areas are or have roots as illegals, mostly Mexican, El Salvador etc.

Because Madrid and Rome are two big and important European cities, and if an airport cannot even manage direct flights to them then it cannot really be described as a gateway to Europe.

Why would they be more likely to be illegal than those who live much closer to the border? Anyway, Chicago has the largest Mexican population in the US anywhere outside Texas and California, while Washington has a large Salvadoran population. As for Boston, I think it has a bit of everything.

I would go with the most flights first, then destinations.

What do you consider Latin America? What countries? Caribbean destinations are by far the most popular heading South. Not including Canada and Mexico (which can be auto traffic also) Americans visit the UK the most, then Dominican Rep, France, Italy, Germany.

Neither Madrid or Rome are real airport hubs (they are certainly important but they aren't the real big players). London (Heathrow, Gatwick), Paris (Charles de Gaulle) and Amsterdam (Schiphol) are much more important.

BTW the easiest way to categorize south of the border is probably,
    Mexico to Panama, C. America.
    The Islands, Caribbean.
    Then S. America

By Latin America, I mean everywhere from Mexico southwards in the mainland Americas. Although Cuba, DR and PR count too, for the purpose of this thread I counted them as Caribbean rather than Latin American. In any event, the point is that the absence or presence of flights between two places isn't just to do with tourism and business - there is immigration too.
