    You can pretty much find the same all the way from France to Norway (basically).

    Gotta hand the Danes one thing: they have better rye bread than we do. This is because the Dutch began to abandon rye bread by the 15th century for (except for the poorer East and South where it remained, together with a kind of rye pancake, until the late 19th century) breads made out of imported wheat.

    That was pretty much the whole basis under the Dutch economic expansion of the 15th to 18th century (particularly strong in the 16th and 17th century): the grain trade. Import, stapling and export so rye was soon seen as something for the very poor and not quite proper for the rest of society.
