    And Latin food happens to be my favorite.

    Probably true, furtherst North I was in Europe was the Netherlands , and their traditional food at least what I tried was crap compared to food I had in the rest of Europe.

    Yes, I know they introduced Maize to the European settlers long ago, but I'm talking about cuisine or dishes that are culturally specific to Native Americans. After all, there were was a wide variation in tribes and locations. I suppose we could consider the tamale dishes and rice/chicken cuisine in Central/South America to be Native American. Many Latin Americans have mostly indigenous ancestry (Inca/Mayan) rather than Spanish.

    Some time ago, I did many weekend mountain retreats with a men's group, usually as a chef in a staff group of "Men Of Service" (MOS). On one occasion, a Hispanic Chef taught me how to make cuisine embellished by banana leaves.

    yes I've had homemade tamales made with banana leaves. They are delicious!
    What an awesome experience for you to learn from a chef!
