Then no one is French since you can't prove all your ancestors going back 800 years were born in the current territory of France. And we gotta take into consideration that France wasn't even a nation with the same territorial domain it has today back in the Middle Ages.

That is irrelevant, I mean it is irrelevant if 800 years ago let say Alsace belonged to France or to Mars. Now it is France and Alsacians are considered French. So when I say "ethnic French" I am stalking about people of any region of current France whose ancestors were born in any current French region for the last 800 years.
