While I understand to foreigners differences may be slight or non existant, for us it's not that difficult to separate the two based on looks.
There are distinct Serbs and Croat faces and they have different vibes. Overlap is big especially between southern Croats and western Serbs, but still, not the same.
I would say individually most of people can fit as both, but you are starting to see difference on group level.
Pigmentation is secondary here (Croats are lighter on average, but not by much, and there are regional variations: some Serb sub-groups are lighter than some Croat sub-groups etc)
Let's compare national teams with photos from last matches they played in 2019:
Serbia (vs Ukraine)
Croatia (vs Wales)
Facial features differ quite a lot. For me as Croat first thing I notice is much stronger Pontid admixture among Serbs. While we have visibly more northern types.
