"Will" and "shall" are used interchangeably in England, but I do find that "shall" is less used by Americans. Also, "ain't" exists in our vocabulary too, but it's mostly considered lower-class and/or London cockney slang rather than a real word. Other than that and what you just mentioned, the only real difference is a few spellings and then the accent - but I wouldn't worry about either of these too much.

I find Germans to be a relatively homogeneous group, like other European nations.
Of course, there were different racial groups in Germany historically (baltid, nordid, etc), but since reunification and WW2 the populations have moved so much and mixed so much, that there are no clear racial distinctions anymore. For example, you regularly find Northern Germans in Bavaria because the economy there is great. Germans now move alot.
What you do find is small pockets of ethnic enclaves, in a very mixed and homogeneous Germany.
An example would be the odd pure alpine German in Southern Germany (small, swarthy, black haired) but the majority of Southern Germans are still sub-nordid.
Germany is really nowadays a homogeneous collection of sub nordid people. I'd venture to say some taller and more blonde in the north, and a little smaller, stockier, and dirty blonde in the south. But again at the outlier level as the main population is homogeneous.
Simply put, when you have an already closely related blood & races, mixing and homogeneization happens very quickly and any semblance of distinctive races disappear.
I observe the same phenomenon in most European countries like England, France, Belgium, etc.
I think the main remaining difference in Germany is more cultural than racial. And that is East/West and North/South.
