Eye and hair colour distribution among 650 French (both sexes studied)
My results for France. First of all, I would like to thank Ikiru who made clear for me what the population ratio between Northern and Southern France is, as well as Gab the Gaul for providing me with the names of some people I included in this survey of mine.
I clarify my criterion for those who haven't seen my topics of this kind:
I used the Fischer–Saller scale for my hair colours survey. Colours A to O are what I and the authors count as blond.
The numbers V and VI reflect reddish blond hair and affect both blondism and rufosity values. Deeper orange shades I also include as reddish blond.

To estimate the eye colours distribution I used the Martin-Schultz scale. Green eyes with brown spots when green dominates I count as light. Evenly mixed green-brown shades and such where brown dominates I consider hazel and don't count as light.
The Martin-Schultz scale includes:
1-2 : blue iris (1a, 1b, 1c, 2a : light blue iris - 2b : darker blue iris)
3 : blue-gray iris
4 : gray iris (4a, 4b)
5 : blue-gray iris with yellow/brown spots
6 : gray-green iris with yellow/brown spots
7 : green iris
8 : green iris with yellow/brown spots
9-10-11 : light-brown and hazel iris
12-13 : medium brown iris
14-15-16 : dark-brown and black iris

Colours 1-8 I consider light. 9 is where non-light eyes begin for me.
A few clarifications on the survey itself:
My survey of females is mostly based on footballers, actresses, several tennis players and a small number of others. The male results are based on singers mostly, some actors and a handful of other people.
I excluded all Sub-Saharan admixed French, as well as all immigrants with no French admixture. I excluded the vast majority of North African and West Asian admixed French (especially when displaying Arabid or Syrid features that was the case of some people with Arab ancestry or Armenoid that was the case of one half Georgian). I included only 4 women with partial non-European admixture (one half Moroccan, two half Algerians and one half Kurd if I remember correct) which were in Mediterranean-Cromagnid-Atlantid-Dinarid range and I found them passable in Europe and France in particular. The other woman with partial foreign roots is Juliette Binoche - 11/16 French, 4/16 Polish and 1/16 Portuguese.
Foreign ancestry among males accounts to 7 people with 1/2 or less Italian roots, 2 half Russians, 1 half Spaniard, 1 half Armenian and 1 half Algerian (of Dinarid type). Of 6 black-eyed people in my survey one is 1/2 Northern French and 1/2 Italian. The other 5 black-eyed persons are fully French by origin.
This survey of mine is unique due to the fact that, unlike previous cases where I found 1 or 2 (if any at all) people displaying heterochromia, here there are 8 of them. 5 people have a grey-brown mix and 3 - blue-brown. One of those with a grey-brown blend has mainly grey colour and the brown admixture is small, so I counted him as light-eyed. The others with evenly or mainly brown mixed shades I rate as dark-mixed.
I included 180 female football players from the 2018/2019 season in Ligue 1 - 113 competing for Northern French clubs and 67 athletes from southern clubs.

Some athletes in the south have certain northern origins and vice versa, as one could expect. They remain a minority, anyway.
I then included 13 tennis players from Northern France and 8 from Southern France using this list:

Again 200 men with Northern French and 125 with Southern French ancestry were used in my survey, with their birth place/origins listed in their respective pages. I didn't include people with no known roots within France.
I included 189 singers from Northern France, as well as 84 southerners:

Northern French women belong mainly to phenotypes like Nordocromagnid (Tronder and Anglo-Saxon variety), Nordid (Hallstatt, Corded and Keltic variety), Cromagnid (Faelid, Brunn or Borreby) with significant Dinarid influence. Dinarid is in fact the main non-Northern influence among women in Northern France. Less important factors are Atlantid, Atlanto-Med and Alpine. The shift among Nordish phenotypes is towards Germanic look rather than Celtic one. The 19,5% green eyes rate is the highest I have encountered with in my studies so far.
Southern French women (125):

Nobody had rufous tones in their hair colour. Among men I saw 3 northerners with reddish hair and only southerner who showed the trait. Apparently it's much more common in Northern France.

The south feels more like a melting pot. Nevertheless, Southern French women are lighter-eyed than their Italian and Croatian counterparts. In terms of female blondism Southern and Northern France are comparable but the north exceeds in light eyes frequency by a 12% margin. Female phenotypes include Tronder, Atlantid, Atlanto-Mediterranean, Sub-Nordid, Dinarid, Norid, Alpine, Nordic and Cro-Magnon types.

Dark hair rate (dark brown + black): 50% (100 men) - men are considerably darker-haired than women in both parts of France, as you will see. They have less dark hair than Italians but more than Croats, for instance.
Also, in both parts of France, while nowhere near typically Mediterranean and rather neutral in terms of features, males show more Mediterranid admixture than females. The most common look among both southerners and northerners is Atlantid (Nordo-Mediterranid). Both unmixed Nordids of various kinds and pure Atlanto-Meds are frequent, the first being more typical in the north and the latter in the south. The north has more Cro-Magnon admixed men (Phalian, Borreby or Brunn). Many French men show Dinarid or Norid phenotype. Gracile Meds are VERY RARE. As a whole, most French people of both sexes are orthocranic (with skulls of average height) or hypsicranic (high-skulled). Chamaecrany (low skulls) is not significant and mainly due to the Alpine element.
Southern French men (125):
