Which makes me think he is for sure some Ukrainian since he scores 80 in west Ukraine.

Ur grandfather definitely has Ukrainian ancestry unlike your grandmother but what is his dodecad V3 results? I have seen western ukrainians with elevated NW Euro percentages but not exactly as high as your grandfather. I did however see a southern pole with results similar to your grand father. This was due to German ancestry due to the fact that there were Germans mining in the tatra mountains, maybe something similar in western Ukraine?

No not exactly just that the western urkainian in him is from the genetically eastern part of the spectrum of Western Ukrainians(which clusters with other more eastern Ukrainians) and the other half of him looks to be German. I'm not super well verše in western Ukrainian history but I'm sure Germans were settled there as well during Austro-Hungarian times.
