Eating meat with your hands was considered improper in polite Southern society so they gave their slaves the legs of the chickens, it became a part of their culture.

The examples I showed (minus the Dutch examples of lekkerbek and kibbeling which are considered fast food here and are usually just finger food - sometimes they are combined with fries to create our version of fish and chips) , are considered regular Filipino food and I have eaten them deep-fried and I have eaten them steamed. I have had them for breakfast and for dinner. They go well with soy sauce mixed with calamansi juice, rice (I'm a fan of crispy tutong), tortang talong and green stuff.

I think the bigger question is why white Americans like chicken breast over dark meat. My family did get fried chicken on occasion but not very often.
