Some scientific truth behind them, but the science isn’t perfect, as both genetics and environment affect our appearance though I’d argue unless your missing an eye or something genetics has a far stronger affect

you don't understand what science is. not all science has the same degree of precision. you have a very broad range of certainty between exact sciences and social sciences.
phenotypes map to geographical spaces with certain degree of precision, well within the precision of social sciences. of course, DNA testing improves that multiple times over.
