Blond as a kid, he reaches a dark blond colour at age 15.
At 16 seems to have discovered hair dye (rare thing to do if you're male, especially at this young age) and in the next few years can be seen with various shades of brown hair (those from age 16 and 22 being particularly different). In his 30s he hesitates between blond and medium brown hair dye (sometimes with ashy tones). A few photos from this period reveal a blond colour similar to that from his early to mid teens. Blatantly fake blond nuances at 31 and 42.
At 43 his beard is grey (most likely hair, too) and he returns to brown tones. At 45 it's clear his hair has gone really grey and he uses medium ash brown tones to cover it. Similar nuances after that.

That he in fact grew up as a blond is also noted here by a person whose wife was a high school classmate of Pitt's:
