Best Candidates to me were Colombia and Venezuela
Yes, I absolutely agree with you (+75% Euro is to high to be close to the average) and as I said in my opinion Colombia and Venezuela are the best candidates.
May be we could consider PR as Carlitos said but I think that It's too Euro to be average... IDK...

I think the average in Latin America would be like the one in Colombia or Venezuela.

Cono sur is like 70% Euro on average.
Caribbean Hispano + Northern Sudamérica is like 63% Euro.
Bolivia, Peru and Ecuador are like 30% Euro all combined.
    Brazil is 70% Euro.
Central America must be only like 30%-35% European more or less.
    Mexico is like 47%-50%.

*Brazil, Mexico, Colombia and Argentina all together make over 60% (~400 millones) of the Latin American population of the total ~670 million. You finish the math if you want.

Average would be like Venezuelans cuz italian input from argies while peruvians+bolivians+central americans drops the euro input. Quebec and german minorties of the southern cone could been an equivalent to the german minortiy of Venezuela. SSA of Haití, Brazil and DR would be droped by non-SSA countries like Peru and Mexico.

Another important issue, after Argentina México and Chile are the countries with most irish ancestry.
So may be they could be part of the challenge...
Except that Chile is the country with the less SSA contribution of the whole LATAM.

You know what let me narrow it down for only Ibero-America(non of the French side since they lack data and it gets confusing). I feel like it would be somewhere around 60% Euro 20% NAM 20 Afro. Basically something like Colombia and Venezuela

Haitians arent part of Ibero America. And even there, average seems to be more venezuelan than colombian due italian input.

I didn’t deny Venezuela was more like that and i know that’s why I’m narrowing it down now to only Hispanic countries of the Americas and Brazil aka íbero-America, I didn’t mention Haitians

Let's roughly estimate the average for the most populated nations:

    Argentina+Mexico+Colombia (~200 million)= 50% Euro, 25% native + 5% SSA.

    Brazil (~200 milion) = 70% Euro, 23% SSA and 7% native.

Add all together and it's going to be something like 55%, 30% native and 15% SSA.

Peru is more populated than Argentina.
