Well we in Iran historically only called ourselves "Turk" and the language turkish. Nothing more nothing less.
For example for my grandmother "Azerbaijan" is nothing more than a province. She probably don't even know "Azerbaijani/Azeri" in a context of an ethnicity/language.

Many villagers speak old turkish, especially the very old people. But do you mean with ottoman turkish the language of the people or the language of the state?
I just can say, if those „villager“ turkish would have also letters like x or q. My grandma calls the TV sender fox „foch“ lol.There are also non azerbaijanis who has a dialect which sound familiar with Azerbaijani. I think, next 20 years the villager turkish with big vocabulary will die out.

Of course, the languge would change after long time, also because of the state(ottomans). But without schools or education, you wouldn’t have a bing impact from higher authorities. I think other thinks like those geographical isolatian etc were more important to name, or trade for example. If i read some textes of ashiqs from old time, it can be said that it is familat to turkish, but idk how they pronounced the terms.
Generally, not just because you said it, many thinks the modern turkish language was made in Atatürk era. My grandparents and grandgrand parents etc did not visited school, my grandma(rip) were illiterate. But all spoke that turkish what we know nowadays, just like central anatolian dialect. How they would learn this artifical turkish without visiting school? Very annoying misunderstanding.
