But the fact that for your European side the orcales is using Thessaly as a referrence means you almost certainly have additional West Asian-like DNA. Again, pretty much as expected. The total European score aligns almost flawlessly with 23andMe's estimate. The Chamar percentage I believe to be accurate in this instance, since full Gypsies are about 1/3 and you have a decent South Asian score on gedmatch. But for the Cappadocian (East Anatolian native basically) there's a margin of error since a full European could score that if they are somewhat southern shifted compared to the average.
All in all, it's safe to say that you're about 63-67% European, 17% South Asian and 16-20% West Asian.
