Vineland Saga, eh? I see you are a man of taste! I don't have to add it then.
I'm a fan of this studio:
Sakamichi no Apollon, guys, if you haven't watched this one:watch it.
Music by Yokko Kano.
A coming of age anime brought to by the same folks that brought you all the above. I don't even LIKE jazz. I hate jazz. lol
Mononoke
A Japanese psychological horror movie and short series. Every frame is art. You won't know what the heck is going on, but by God, it will be beautiful.
The first season of Mushi-shi. ONLY the first season. The second season was cheaply done and you can tell they did it only because the first season was so popular. The first season tells complete story.
This is another relatively unknown series that's a work of of art from the beginning to the end. It follows a man who is a spirit healer. It's hard to explain. It's very good.
Shigurui: Samurai in Edo Japan. Far from being nostalgic, this anime really doesn't portray Samurai as good people. They can be evil, ambitious, sadistic, and cruel. And this anime is pretty violent, gory, and adult. I think it's better than its manga counterpart.
Berserk, the 1997 version. What else can be said about it?
The first Basilisk (not the 2018 version).
A Romeo and Juliet story set in Japan with magical ninja.
For something a little more fun and not super serial, I recommend Samurai 7. A retelling of Seven Samurai, but in a sci-fi setting.
Shouwa Genroku Rakugo Shinjuu
Not about action, but a historical anime about the Japanese art of storytelling. It's very good. For adults only because of its serious tone and subject mater (which children and teens may find boring).
And that's just the stuff I can think up right now, and NOT counting movies or studio Ghibli, or live action movies I've seen of theirs. I'm sure if pressed, I can think of more.
