Since the virus had to work harder to spread past masks and quarantine, it mutated to become more transmissible, but also weaker/less lethal mainly by trying to give the infectee more time to run around and pass it on rather than incapacitate him/herself fully. The virus is weaker strain because it is to its advantage.

If it knocked out its host on their feet it wouldn't do itself any good, as it wants a weaker version that is spread by asymptomatic people.
