Most don’t speak French fluently. There’s a small percentage that do. It’s pretty admirable.

This comes to my mind every time I read or hear the word cajun.

Southern Comfort (full movie). The film, set in 1973, features a Louisiana Army National Guard squad of nine on weekend maneuvers in rural bayou country as they antagonize some local Cajun people and become hunted.

Their dialect is weirdly similar to French, I can pick up most of what they say. I don't know much about Cajun culture, but i love the Cajun seasoning

I noticed one thing in France. All regional languages and dialects have been nearly wiped out, but there are still accents and French cuisine is also very regional. It's almost like cuisine is the way in which French retained their regional pride still.

That's everywhere somewhat the case, even in the Netherlands. French however are more visibly proud of their regional cuisines next to their higher cuisine. More people cherish it instead of forgetting that aspect of their culture.
The process of language standardization, mass access to literacy and education, mass media (TV, Internet, music), travelling that has been occurring for more than 150 years in the world, has not only in France, reduced regional accents. You can see every generation has less than before thick regional accent.

In France it was stronger than other countries because precisely, France has a very high top-down, centralized political culture (called Jacobinisme), which aims to uniform all the territory in terms of laws, habits, language, and so on. It's because France has a very weak ethnic identity consciousness, it's the political State that created the French Nation (while in other countries, it's the Nation, as a conscious political ethnicity, that precedes the political-administrative-lawful State).

But still nowadays in France, you find regional accents : the Nord (called Chti, around Lille), Parisian, South (Provençal-Marseillais), East (Alsacian). Not to mention other French-speaking countries that have their own accent (Belgian, Swiss, Quebecois). It's true that other regional languages are dying or anecdotal (Basque, Breton, Corsican).

You have even, because of immigrants and children of immigrants living in the suburbs (banlieues, cités), a new form of dialect (sociolect) of French, from there (accent des quartiers), that has its own accent, slang (incorporating foreign Maghrebian words for instance or twisted words, called verlan). Some of these words have even become standard in French (meuf when you twist femme = woman).

Back to the Cajun, it's surprisingly very understandable for me, with indeed Quebecois influence, better than Carribean créoles (Haiti, Guadeloupe), who are for me not very intelligible
