In Spain:

Universidad Complutense (Madrid)

Universidad de Barcelona (Barcelona)

Universidad de Salamanca (Salamanca)

Universidad de Valladolid (Valladolid)

Universidad de Navarra (Pamplona)

There are many other universities in Spain, but those ones (and probably others) I know they are among the most prestigious.

In Venezuela:

Universidad Simon Bolivar (USB) (Caracas)

Universidad Metropolitana (UNIMET) (Caracas)

Universidad Catolica Andres Bello (UCAB) (Caracas)

Universidad Central de Venezuela (UCV) (Caracas)

Universidad de Oriente (various campuses spread in several eastern Venezuelan cities, like Barcelona, Puerto La Cruz, Maturin, etc)

Universidad de Carabobo (Mostly in Valencia, but also has a satellite campus in Maracay, Aragua)

Universidad Centro-Occidental Lisandro Alvarado (Central Western University) (Barquisimeto)

In terms of historical prestige, Coimbra would be the Portuguese equivalent to Oxford. It is among the ten oldest universities of the world.

Canada (Ontario) depends entirely on program: Queen's University (very expensive), Western University (especially for Business, Richard Ivey can have you recruited for Wall Street), McMasters (for Medical Sciences), Waterloo (mainly for Sciences, not difficult to attend for anything else), University of Toronto (the "wokest"... ironically Jordan Peterson taught here)
Outside of Ontario, University of British Columbia and maybe University of Ottawa
None of these schools are too difficult to attend in my honest opinion (as long as you have A grade and A = 85 in Canada) unless you intend on STEM at McMasters or Waterloo
