For example, I lived in Miami for the first 14 years of my life and pretty much never heard a Latino describe themselves as a "White Mexican" or "White Cuban", they would view someone like Andy Garcia just as part of their "group" as Celia Cruz, race isn't that relevant to their identity as a people, you know what I'm saying?

I think LATAM societies are more divided by class than anything else, imo.
Generally I agree, but I am sure racial consciousness is more prevalent in LATAM than you claim, even if not to the extent apparent e.g. on this very forum.

Perhaps, but its still not comparable to Anglo societies, I don't think.

The US has a history of race segregation while Mexico has a history of race-mixing so I am pretty sure it would be more accepted in the latter although perhaps not more common since the overall population is more homogenous.

Which history of race segregation, if USA has been since the beginning a multiracial country, and racial mix has happened there even since before its birth??

Mexico is a mongrel state. As far as I'm aware interracial relationships were not frowned upon in the good old days so the lower and middle classes of New Spain mingled with each other.

Case in point (they are not from Mexico, but the picture perfectly illustrates the point being made):

Mexico has no specific race. Casta system is the one thing they'll try to stick to each other. However there is usually talk and jokes about who is the brownest in a group. There's just a general association of retardation with people who look more native.

If you tell a random Mexican they are white they will look at you like a retard. An Euro-Mestizo will 100% believe they are the same race as an Indo-Mestizo, but only when its convenient.

According to a book Henry Louis Gates Jr. wrote about blacks in Latin America, virtually everyone in Mexico has some black ancestry because of the magnitude of slaves and the unrestricted interracial marriages.

There were many more slaves brought to Mexico than the US but there are only 1.4 million blacks in Mexico. The reason is they all bred into the general gene pool in a way not even seen in Brazil.

Aren't many Mexicans ignorant and believe that the South European look is local to the region?

Yes, but saying someone is 'mixed-race' is actually pretty vague, as in this case it means anything from someone who has one European ancestor and 99 Amerindian ancestors to someone who has one Amerindian ancestor and 99 European ancestors, plus all the grades in between.

    In Mexico, I assume.

In my opinion, since Mexico is majority mestizo and a former Spanish, Indo-Mestizos might be discriminated by Criollos/Castizos, but these last two have no problem mixing if they belong to the same social class, these telenovela stuffs.

Same for average Brazilians, when it comes to Med/Southern Euro phenotypes. Normal people care more about telenovela and football than history, so they don't think Meds/Berids are European faces, unless the person that looks like it is wholly descendant from recent Euros.
